Instructions
- Prepare Vegetables: Chop the onion and garlic finely. Cut the cauliflower into small florets to ensure even cooking.
- Sauté Onion and Garlic: Heat olive oil in a large pot over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Then add minced garlic and cook for an additional minute until fragrant.
- Add Cauliflower: Stir in the cauliflower florets and sauté for 5 more minutes to start softening the vegetables.
- Simmer in Broth: Pour in the low-sodium vegetable broth, increasing heat to bring the mixture to a boil. Once boiling, reduce heat to a simmer and cook until the cauliflower is tender, approximately 15 minutes.
- Blend the Soup: Use an immersion blender or transfer the mixture carefully to a regular blender. Blend until the soup is completely smooth and creamy.
- Finish with Coconut Milk: Return the blended soup to low heat. Stir in the full-fat coconut milk, season with salt and freshly ground black pepper to taste, and warm through before serving.
